Assemble the tamales: Lay a corn husk, glossy side up, on the counter with the wide end at the top.Scoop about ¼ cup of dough onto the top, center of the corn husk. Lay a piece of plastic wrap over the dough and use your hands to press and spread the masa into a thin layer, about 1/4 inch thick. When ready to use, thaw, wrap in a damp paper towel, and heat in the microwave for 2 minutes and they are ready to go!We had a family tamale-making party yesterday, me being the expert after making them once at home. If you don’t have leftover chicken, then cook some chicken thighs and/or legs in 5 to 6 cups of water. Bring to a boil, then reduce the heat to medium low and simmer, partially covered, turning the chicken occasionally, until cooked through, about 35 minutes. The first ones were a little sticky, but the second ones, that had set longer, were perfect and that was after a 1 hour steam.Isn’t Dixon chile powder the best? !These look fantastic! From my experience, I do find it harder to know when tamales are done when they are made with oil/butter rather than lard. I don’t think I’ve ever had a tamale. Pour the boiling water over the corn husks.
